Deliciously Carrot Cake with Pineapple and Raisins

Have you ever tried a delicious moist carrot cake with pineapple and raisins? I believe that you have definitely tasted a carrot cake in your life, but this combination will definitely amaze you.
Today, I have also brought to you new classy carrot cake recipe. So now you will think what's special in this carrot cake. Many people share same recipe of this carrot cake, but this is my best ever carrot cake recipe.

I have received many compliments after surprising my friends and guests with this twisty dessert. People always ask me to share my recipe. That's why I thought to share my recipe with everyone.
INGREDIENTS:
FOR CAKE
Grated and Squeezed Carrot    50 gms.
Caster Sugar                                180 gms.
Canola Oil                                     240 gms.
Whole Eggs                                  3 nos.
Flour                                              200 gms.
Baking Powder.                           7 gms.
Cinnamon Powder                      5  gms.
Tin Pineapple                               50 gms.
Raisins.                                          40 gms.

FOR CREAM CHEESE FROSTING
Philadelphia Cream Cheese.   250gms.
Icing Sugar.                                 200gms.
Butter.                                           50gms.
Orange Zest.                                1 no.


DIRECTIONS:

1. Firstly, Preheat oven to 180℃. Now grease a 8" baking ring or mould.
Now you need to finely squeeze grated carrots. Now put aside these grated carrots in a bowl.

2. Now mix caster sugar and eggs well with the help of whisk. Do it slowly, dont make eggs fluffy. When you see sugar is dissolving, pour carrots and pineapple in it and mix well.

3. Then sieve flour, cinnamon powder and baking powder, raisins and place  in the eggs and sugar mixture. Now fold the flour with the help of spatula.

4. Now, pour oil into this mixture very slowly and mix it gently. When you see the oil is completely mixed.

5. Now take a 8" baking ring or mould. Grease the mould with butter. Put a parchment paper inside it. If you are using ring, you can use silver foil to cover one side of ring. Now pour the mixture into it.

6. Now bake the cake for 30 - 40 minutes. To check, pin a toothpick inside the cake. If it comes clean. Cake is done. Now refrigerate the cake for 3 hours to completely chill.


7. While our cake is chilling out. We can make its cream cheese frosting to complete icing on the cake. Take your cream cheese and butter and leave it at room temperature for half an hour. Now mix icing sugar with cream cheese and butter. Mix well with machine paddle. When you see the cream is becoming fluffy and creamy well. Now add orange zest. It will take around 10 - 15 minutes to be ready.

8. Now take out your cake from the refrigerator. Cut the cake from side to make its two slices. Take first layer and spread the cream on it. Then repeat the process with second one. Cover only top of the cake with icing. Cut it into six or eight pastries.





Now you can serve whenever you want.

Genrally this cake live upto 6 - 7 days in a chilled refrigerator. However it may live for some more days. But it is not good idea to serve stale food.
