Mango Key Lime Cheesecake




If you are facing hot summers these days, this mango key lime cheesecake can become life saver for you. But if you are not facing the summers. You can still give it a try. 😄 I am just kidding.

Mango and key lime are perfectly combined inside this bake cheesecake.

 You will definitely love this combination because it has great taste mixed with a common cheesecake.

It's my personal recipe which I made many times at my workplace. By the way, I didn't introduce myself? I am a pastry chef with 10 years of experience, you can easily trust on my recipes. So don't waste the time, let's begun.

Mango key lime cheesecake



INGREDIENTS : 
8 SERVINGS


For Crust :-
1. Digestive biscuits.          8 nos.
2. Melted butter.                50 gms.
3. Caster Sugar.                 20 gms.


For Cheesecake :
1. Cream Cheese               400 gms.
2. Heavy Cream.                200 gms.
3. Caster Sugar.                 150 gms.
4. Eggs                                     2 nos.
5. Corn Flour                         20 gms.
6. Mango Puree                 200 gms.
7. Key Lime                             1 no.



DIRECTIONS :

1. Preheat oven at 180℃ (360°F).

2. First, take biscuits and crush them using rolling pin. Place them in a bowl and stir in melted butter and sugar. Mix well until combined.

3. Pour biscuit mixture into 8" springform cake pan. Spread biscuit mixture evenly on the surface of pan.

4. Bake it for 10 minutes in the oven. Take out the pan and leave aside to cool at room temperature. And Immediately decrease the temperature of oven at 150℃ (302°F).

5. Then take cream cheese and heavy cream. Pour them in a bowl and whisk slowly to combine. Add Sugar in it and mix it well.

6. Then add eggs one by one to combine easily. Then pour mango puree and key lime juice into it and mix well. Mix everything lightly so that cream and cheese should not be cuddle. And then lastly put corn flour and mix it.

7. Now take cooled biscuit mixture. Pour the cheesecake mixture into it. You need to fill the mixture only 3/4th of the pan. Then take the pan and put into a highted baking tray.

8. Place the tray in the oven. Fill half the tray with water. Close the oven and bake the cheesecake for 1 hour 15 minutes at 150℃.

9. Turn off the oven and bake for additional 30 minutes with oven door cracked. Now remove the cake from oven and place inside the freezer. Let it be chill for 24 hours. Now take out cheesecake from the fridge after overnight or until well chilled and set.

10. Pour some mango glaze and spread evenly on top of the cake. Take whipped cream and make drops in the corner of cheesecake. Or you can decorate using your own sense. Cut down 8 triangle slices and serve.

So it was an amazing experience to make a mango key lime cheesecake. I don't know, I I think so.

Notes : You need to take out cream cheese and heavy cream at room temperature before an hour to use it.
